THE SPIRITS OF THE ISLES OF SCILLY
SC DOGS are the purveyors of premium spirits; distilled, aged and bottled on the farm, the first and only rum distillery at St Martins, Isles of Scilly.
“Distilled from centuries of Island life”
Stories of shipwrecks, smuggling, sunshine and storms have flowed in the blood of the fisherman and farmers of St Martins, shared over a glass or two in the drinking houses. SC Dogs have distilled these stories with each bottle is dedicated to the history of one of our down sea dogs.
“spirits steeped in history”
The Spirit of Bruce Christopher – Honey Spiced Rum
Named after Bruce Christopher (1949-2013), an honest man as warm in character as the honey of the bees he kept. A coastguard, farmer, rower and SC Dog.
Sea Dogs returning home to the Isles of Scilly from far-flung corners of the world would bring back seeds which were planted in the Abbey Gardens, from New Zealand flame tree, Mexican Agave, and South African Aloe to the local Heather - which the bees use as exotic nectar to make their flavoursome honey. A premium, small-batch rum gently distilled and aged on-site, then infused with local Tresco honey and pure Scillonian water. The sweetness of honey with lingering citrus.
The Spirit of William Gibson – Gold Rum
Named after William Gibson (1839-1926), the son of a smuggler and Master of the St Martins pilot cutter, navigating safe passage around the treacherous coast around the Isles of Scilly. A selfless spirit, master mariner, farmer and SC Dog. A premium, small-batch golden rum gently distilled and aged on-site, then infused with local ingredients and pure Scillonian water. Glowing with notes of caramel, green grass, vanilla and light oak wood spice. Rich and full-bodied yet complex smoothness.
The Spirit of John Nance – White Rum
Named after John Nance (1797-1881), the rum smuggler, who used to ferry cargoes of contraband rum and brandy across the Atlantic swell from France to the Isles of Scilly. A farmer, rum smuggler and SC Dog. A premium, small-batch, well-balanced white rum. Subtle notes of heather, rosemary, black cardamom and a bite of pepper. Silky smooth as a warm finish and the tang of the sea.
Try the “Rumito” - Muddle 4 slices of fresh lime, 1 tsp brown sugar and a handful of mint leaves in a glass. Fill the glass with crushed ice, add 50ml SC Dogs White Rum and top up with soda/tonic.
